rmittent-drying techniqueand combined treatment of infrared and convective methods increases in terms of reductionin drying time, less energy consumption, and product quality improvement. The main component of an infrared dryer is the radiator (or called emitter). De- pending on the heating mechanism, this is classied as two types. It may be either anelectrically heated radiator (metal sheath radiant rod, quartz tube, or quartz lamp), or agas-red radiator. In the last type, one side of metal or ceramic perforated plate is heatedby gas ame, whereas the other side of this heated body is exposed to the irradiatedmaterial. Infrared drying of foodstuffs is quite uncommon; however, laboratory-level studies on infrared drying of grains reveal the possibility of its applications on larger scale. Theinfrared (thermal) treatment applied to thick layer of freshly harvested moist grains inconjunction with vigorous mixing of the layer shows considerable reduction in dryingtime. While intensive irradiation accelerates the dehydration, mixing prevents overheatingthe grain beyond the permissible limit. Drying of grains (.., wheat) by infrared radiation shows constant rate period similar to convection drying of layer of grain. However, the reasons for such are different from each other. In infrared drying, the constant-rateperiod depends on the sufciently intensive delivery of the moisture from the inside layerto the drying surface. On the other hand, in convective drying of substantially thicklayer (0.1.2 ) of sample at relatively low airow rate, it arises from low moisturetransfer from the surface (. low ow rate (0.0 /) of cold air (near 2 ) causes more lowering in temperature of the surface than that of the center layer, which helps in movement of inside moisture toward the evaporating surface.
