grades of durum wheat in the absence of no. 1 grade of durum wheat ina poor crop year. Table 1

shows how three varying qualities of semolina are producedfrom these two wheats and their targeted extraction rates. The blending of

semolina instead of various grades of durum wheat obviously means greater control and exibility in terms of corresponding desired quality

of multitude of products, ranging from the high-quality end to economy pasta products. For example, 8%of no. 1 semolina may be blended with 2% of no. 3 semolina for the production ofpremium pasta products, such as, rotini, rigatoni, or other. For the production of short and nonsensitive shapes where starch release is not critical, such as tubetti and elbows, 1%of no. 3 semolina may be used.
