Ideally, the entire endosperm of durum wheat would be reduced to semolina of desired granulation, com-pletely eliminating the need for reduction system. Unfortunately, in practice, there isalways small proportion of inferior granular stock that comes from the last break, thelast sizing and tail end of the sizing purication. These stocks are too ne, too poor incolor, and too contaminated with bran to be converted for inclusion in the mainstreamsemolina. Instead, they are routed to the reduction system where they are ground in smooth rolls to produce our. short reduction system of three to four passages is adequate for this purpose. 5.6 Blending of Semolina and Quality Optimization Finished semolina quality is dependent on the quality of the durum wheat and the effective- ness of the milling process. Poor crop condition, especially low-protein content in the wheat makes the situation very difcult. This is because not much can be done in the mill to raise the protein content except to blend with wheat of higher grades and higher proteincontent, if it were available. Millers may remain vigilant not to make any unnecessaryerrors that may end up causing undue protein loss in semolina. If semolina blendingfacility is available, this would provide opportunities for the adoption of production tech-niques that would allow plant to optimize its milling results and product quality relatively more than convent
