lathyrogens, estrogens, goitrogens,saponins, antivitamins, and allergens. However heat treatment is known to destroy the antinutrients, such as protease inhibitors and

lectins, although it also destroys the vitamins and amino acids. Legumes are good source of dietary ber; the crude ber, protein, andlipid components have hypocholesterolemic effect. The following is brief account of the structure and composition of the major cereal crops and legumes. 2 CEREAL CROPS 2.1 Structure2.1.1 WheatWheat is single-seeded fruit, 4- to 1-mm long, consisting of germ and endosperm enclosed by an epidermis and seed coat. The fruit coat or pericarp (4- to 5- thick) surrounds the seed and adheres closely to the seed coat. The wheat color, depending onthe species and other factors, is red to white, and is due to material present in the seedcoat. Wheat also is classied based on physical characteristics such as red, white, soft,hard, spring, or winter. The wheat kernel structure is shown in Fig. 1.
