occur in the product, induced either by ethylene itself or by chemically similarcompounds that mimic ethylene if present at concentrations higher than ethylene. 4.1.3 Ethylene, Respiration, and Fruit Ripening In general, respiration rate is highest in an immature vegetable and declines with age. In fruits, there are two respiratory patterns. One group has pattern similar to vegetablesand are called non-climacteric fruits. The other group, called climacteric fruits, exhibitsa temporary respiratory increase, which occurs when the fruit reaches full maturation and 4 DeEll et al. size and is entering the ripening stage. This respiration climacteric was rst described in 1 in apple ( but it is now known to occur in other botanically unrelated fruit species(Table . Not all fruit have been examined to determine if they are climacteric or non-climacteric and, in some fruit species, there is disagreement on whether the fruit is climac-teric or non-climacteric. Climacteric fruits respond to ethylene differently than non-climacteric fruits and vegetables. In climacteric fruits, the respiration climacteric and subsequent ripening andsenescence are associated with coincident increase in endogenous ethylene production.Ethylene applied exogenously to climacteric fruits can also produce the same response, depending on the fruit species and its stage of maturity. Conversely, in non-climactericfruits and vegetables, increasing the exogenous ethylene concentration increases the respi- ration and senescence rate, but both both rates decline if ethylene is removed. This re- sponse is repeatable compared with the single respiration increase in climacteric fruits.
