consumed by earlier civilizations as staple, along with other cereal grains. Its consumption as staplethus dates back thousands of years, and it continued to remain dominant until the latterpart of the 1th century. As the primary (milling) and secondary (bakery, pasta, noodles, and such) processing industries began to develop and processed food became more avail- able, the consumption of barley and other grains in whole-grain form began to decline.Barley is still consumed as part of the staple diet in some countries, especially whereconsumption in the form of whole grain is still in limited practice. The consumption of barley today, especially in developed countries, is for nutritional benets. Barley is used primarily for the following purposes: 1. Malting, brewing, and spirits 2. Food uses3. Feed ingredient 1.2 Processing of Barley Barley hulls are removed by shelling. Following the removal of the hulls, it is pearled and may be cut and pearled again. Pearled barley may also be aked; also, it may befurther reduced in size to form granular products of varying degrees of particle sizes thatmeet the required product specications. The total yield of pearled barley products, includ-ing barley our, may add up to about 7%.
