The same inverse relation would alsoexist with the our extraction rate as shown below: Milling moisture over optimum is inversely proportional to throughput Milling moisture over optimum is inversely proportional to flour extraction 3.2.5.2 Calculation of Water Addition The quantity of water added to raise the moisture level to the targeted percentage will be dependent on the following: Natural moisture content of the wheat ( % Desired moisture level of the wheat ( M % Rate of flow of wheat ( ) nk / The following formula may be used for calculation of water in liters per hour (/): Water addition rate (/) /H1W/H2(M2/H1M (1/H1M/H2 3.2.6 Equipment for Tempering 3.2.6.1 Conventional System The conventional tempering system involves slow-moving screw conveyor into which wheat enters at one end. An atomized spray of water is applied on the wheat mass inconveyance with the help of compressed air. The quantity of water is regulated by water owmeter. The water is set manually at predetermined level using the foregoing formula. As the wheat enters the spout that directs it to the tempering conveyor it hits plateconnected to pressure switch. This switch is connected through control circuit with solenoid valve that cuts off the water line in the event there is no wheat ow, owing to interruption in the process. Even though the movement of the conveying blades is slow, there are generally short paddle blades that retard the forward motion of the wheat andthus creating more mixing action. In such system up to 3% of water may be added inone stage. If more water needs to be added it is done over two stages. 2 Sarkar 3.2.6.2 Intensive-Mixing System Such systems have also been in use for many years and have proved their usefulness in terms of the following: 1. Ability to add more water in one stage from 5 to 7% depending on the equipment type. 2. Ability to reduce the tempering time by the following: Vigorous mixing action enhances initial water absorption (supercia
