citrus, apple, pineapple, grape,tomato, and potato are processed in substantial quantities. The waste generated in the fruit and vegetable processing

industries includes both solids and liquids. Proper management of the waste is both regulatory requirement as well as an economic

necessity. Treatment and reuse of liquid wastewater from processingindustries is highly developed area and is beyond the scope of the

present review. The fruit and vegetable processing industries generate 1%6% of the raw materi- als as solid waste. The composition of these wastes suggests enormous potential for pro-ducing value-added products. The typical example is the citrus processing industry, which produces number of value-added by-products from waste, some of them even more valuable than the main product, viz., citrus juice concentrates. In fact, the waste from oneprocessing plant could become the raw material of another plant, and utilization of wasterather than disposal should be the goal of the industry. Bioremediation of fruit and vegetable processing wastes to produce value-added products has also opened up enormous product opportunities.
